What Holds Up in Dry California Weather: Best Countertops For Your Home

Dry Air Is Kinder to Stone Than You Might Think

The 2025 U.S. Houzz Kitchen Trends Study found engineered quartz in 39 percent of renovating homeowners’ kitchens, granite in 19 percent, and quartzite in 11 percent. All three perform well in a dry climate. The differences show up in the details.

Low humidity is easy on countertops. Stone does not draw moisture out of the air the way wood does, so the surface itself stays stable. What our climate really tests is everything around the stone: the cabinets underneath, the sun coming through the glass, and the water coming out of the tap.

Granite: Built for Sun and Heat

Granite carries its color in the minerals themselves. Direct sun does not fade it, and a hot pan set down in a hurry does not scorch it.

That makes granite a strong choice for kitchens with large south-facing windows, and for the outdoor kitchens and patio bars that are so common around here. It wants periodic sealing, and the interval depends on the density of the specific slab more than on the weather.

Quartz: Consistent, Low Maintenance, Indoors

Engineered quartz is nonporous, so it never needs sealing and it shrugs off the hard water staining that frustrates a lot of inland homeowners. For a busy family kitchen it is tough to beat.

The one caution is sunlight. The resin binder holding engineered quartz slabs together is the component that reacts to UV, not the quartz itself.

Pro Tip: When a run sits under an all-day west-facing window or heads out to a covered patio, we steer clients toward natural stone for that stretch. A pale engineered slab in constant direct sun can shift tone over several years, and the shaded section tucked under an upper cabinet will not shift with it. The line between the two is what people notice.

Quartzite: The Middle Ground

Quartzite is a metamorphic stone formed when sandstone meets intense heat and pressure. The result is dense, hard, and highly resistant to weathering and erosion.

It gives you the UV stability and heat tolerance of natural stone with a bright, marble-like look. Our quartzite collection runs from Taj Mahal and Perla Venata to Cristallo and Bianco Superiore.

Hard Water Changes the Right Answer

Plenty of homes east of the 101 run on well water with a serious mineral load. That is a finish question more than a material question.

Pro Tip: On a high-polish dark granite, every drop of hard water that dries leaves a visible mineral ring, and you will be wiping daily. The same slab in a honed or leathered finish hides that spotting almost completely. If your glasses come out of the dishwasher spotted, ask to see the leathered version before you commit to polished.

Why Templating Matters More in This Climate

Inland Central Coast summers swing hard between a hundred-degree afternoon and a cool night. Framing and cabinetry move through those cycles, and a top templated off cabinets that were never fully secured will not sit flat once the season turns.

Pro Tip: We template with 2D laser technology only after cabinets are set, leveled, and fastened, and we let a slab that rode in on a hot truck come to room temperature before we set and seam it. Seaming stone at truck temperature and letting it cool afterward puts stress on the joint, right in the spot you will be looking at every day.
